Cantuccini (or biscotti as they are known outside of Italy) are double baked Italian cookies that are best dunked in a glass of sweet dessert wine or a cup of strong black coffee. They are crunchy, studded with nuts (I went for walnuts) and totally moreish.

I don’t generally eat breakfast before I leave my house in the morning. So more than often, there is a cereal bar that I chomp down along with my coffee.

This chomping down is very important to me. I just cannot have a cup of coffee without something to eat along with it. And that very fact has been the inspiration for many recipes that I have tried.

My Eggless Chocolate Walnut Biscotti was born out of such a craving. I love Biscotti! A cup of coffee and Biscotti is the best pair ever since Batman and Robin. It’s absolute heaven to dunk one in your coffee and then forget the cares of the world. I made these eggless and that definitely helps to cut a few calories and make them a little more figure-friendly. But besides that, these are delicious and really rich and sinful with the dose of chocolate.

 

Ingredients

  • Dry
  • Wet
  • For Dough

Step by step method

  • Step 1

    Sieve all the dry ingredients in a bowl.

  • Step 2

    Mix all the wet ingredients in another bowl.

  • Step 3`

    Add the wet ingredients to the dry ingredients followed by milk, chocolate chips and walnuts

  • Step 4

    Bring together into a dough and divide into 2 equal portions.

  • Step 5

    Roll out with hands and make 2 loaves as shown in the video and place them on a lightly greased baking tray at a safe distance from each other.

  • Step 6

    Bake in a preheated oven at 350°F or 180°C for 18-20 minutes checking after 15 minutes.

  • Step 7

    Once out of the oven let the loaves cool down to room temperature and slice them into ½ inch pieces.

  • Step 8

    After the slicing, place the biscottis on a baking tray and bake again in a preheated oven at 350°F or 180°C for 15 minutes or until all the moisture evaporates.

Tips & variations

  • Enjoy decadent Chocolate Eggless Walnut Biscotti with Tea or Coffee!

  • You can add almonds, hazelnuts and dried barriers for more flavours

  • Store in a Jar for 4-5 days!
