Hummus Spaghetti is an incredibly easy vegan spaghetti perfect for a weeknight dinner! It’s deliciously creamy, very customisable and made together in only 20 minutes!

For the last few weeks, Rachit keeps asking me “when are you going to share the hummus spaghetti recipe on the blog?!” I keep putting it off because well, I switch up my editorial calendar constantly friends. It’s just the way I am and I’ve accepted that about me. But he REALLY loved this spaghetti and insisted that I share this sooner than later because you guys deserved some hummus Spaghetti in your life.

Why Hummus Spaghetti?

Why make this you might ask? The answer is simple: it’s EASY and delish. The concept of hummus spaghetti is so simple, yet so satisfying complex in flavours. We love spaghetti and we love hummus, and combined? You get a creamy, luscious, tasty spaghetti dish that comes together in just minutes. I can’t believe it took me this long to think about adding hummus to my spaghetti!

Apart from the fact that this is the perfect quick lunch or weeknight dinner, I love how affordable hummus spaghetti is. Whether you’re making your own hummus or using store-bought, it’s very budget-friendly and great for meal prep and long story short – needs a place in your life.

 

Ingredients

  • Hummus
  • Spaghetti

Step by step method

  • Step 1

    In a pot of well-salted boiling water, boil your spaghetti according to package directions. When spaghetti is finished, drain and set aside.

  • Step 2

    While spaghetti is boiling, add all the beans into a blender. Add garlic, jalapeño, 3 tbsp olive oil, lemon and blend it. Make a thick paste. add water if needed.

  • Step 3

    In a pan heat 1 tbsp olive oil. Add chopped carrots and green peppers. Saute properly and add hummus. Mix it together.

  • Step 4

    Pour coconut milk into the pan and blend it well. Now add boiled spaghetti. Mix it well using a tong.

  • Step 5

    Add salt, mix herbers, red chilli pepper for more flavours. Mix it together and served with remaining hummus.

Tips & variations

  • You can add cheese for a more creamy texture

  • Using the same method you can make hummus pasta
