Sweet Potato Spinach Kabab

I probably say this too many times. Thursday is my absolute favourite day of the week. Rachit arrives, I get to cook up a storm, we eat dinner, watch T.V. and cosy up at night!

But cosy nights require warm meals right? So when the mister over here begs for a salad as dinner, I’m just not a happy camper. Despite being vegetarian, I just cannot fathom chowing down leaves for a meal.


So this Thursday in spite of all his requests for a salad, I refused. But then marriage is all about the happy halfway, right? So this platter was a quite happy halfway between raw, healthy and fried nibbles. You see a perfect merger of the two- a bit for him, a bit for me.

Not only are these kebabs licking good, but sweet potatoes are a nutrition powerhouse of vitamin A, vitamin C, manganese and copper. They are a great source of fiber and an excellent replacement for good old’ potatoes in any dish. They are also super reminiscent of the Indian aloo Tikki!

Ingredients

  • Boiling Vegetables
  • Making Kabab

Step by step method

  • Step 1

    Heat a pan and pour 500 ml water in it. Cover the pan with a lid and boil it for 1 minute. Add diced sweet potato in the water and boil it for 10 minutes Take out the boiled sweet potato and remain the water to use further

  • Step 2

    Use the same pan and water and heat for 1 minute Add Spinach and Green peas in that warm water also add 1 TSP salt and cover the pan with a lid. Let it boil for 5 minutes

  • Step 3

    Mix the boiled Sweet Potato, Spinach and Green Beans in a bowl and mix it with a smasher. (you can use your hands as well) Heat a pan, add 1 TBSP oil, cumin seeds and crushed garlic in it. After 15 seconds, add sweet potato mixture into the pan and mix it well (keep the flame medium) Add Turmeric powder, Red chilli powder, Coriander Powder, 1 TSP salt and Garam Masala (Optional) and mix it well. Let it cook for 2 minutes. Turn off the gas and add lemon Juice, Mix it well and transfer into the bowel and let it cool for 10 minutes.

  • Step 4

    Add Cornflour and bread crumbs into the mixture and mix it well. Take slight oil in your hand and try to make round patties (if the mixture is sticking in your hand you can apply more oil in your palms) Sprinkle cornflour on both sides of patties. (Because with this the patties will not stick into the pan)

  • Step 5

    Heat a pan, add 1 TBSP oil and spread it using a brush. Placed patties into the pan with distance and after 5 seconds shake the pan After 2 minutes turn the patties and let it cook for another 2 mins. Both the side will be light brown. Now it's ready to eat.

Tips & variations

  • Served with salad, dip or hummus

  • You can replace the potato Patti in a burger with these kababs
